Overview

A delicious and juicy recipe for oven baked/grilled salmon or trout filet in a flavorful mayonnaise sauce with dill and onion.

If possible, I recommend preparing the recipe on the grill, which gives the fish a nice smoky flavor, but the same tasty and juicy end result can be obtained using the oven.

Baked Salmon with Mayonnaise Ingredients:

  • Salmon/Trout filet: Both salmon and trout work perfectly fine in this recipe. The taste is pretty much the same and the only difference is that the salmon has a slightly higher fat content than the trout filet. The most important thing is that the fish is as fresh as possible.
  • Mayonnaise: You can use any of your favorite mayonnaise, but a light mayonnaise makes the sauce lighter and healthier. I myself always use Hellmann’s light mayonnaise in the recipe.
  • Dill: I definitely recommend using fresh dill if possible.
  • Onion: Onion gives the mayonnaise coating a nice crunch and good taste. One smaller onion is enough for one serving.
  • Lemon: we use freshly squeezed lemon juice both in the mayonnaise sauce and to season the salmon filet.
  • Salt and pepper: season both fish and mayonnaise sauce with ground salt and pepper.

How to Make the Best Baked and/or Grilled Salmon with Mayonnaise?

  1. Remove the bones from the salmon/trout filet – Removing the bones can be annoying, but one of the most important steps, because what could be worse than finding fish bones in your mouth while eating. Removing the bones is quite easy if you use any pair of tweezers or smaller pliers.
Feel the locations of the bones by running your hand over the fish filet. Run your hand over the fish filet in the opposite direction to the ends of the bones so that the ends of the bones poke out a bit more. Then use tweezers or tongs and gently but firmly pull the bones out of the filet one by one.
  2. Chop the onion and dill and mix together the mayonnaise sauce – Chop the onion and dill as finely as possible and place in a mixing bowl. Add mayonnaise, a bit of the squeezed lemon juice and season with salt and pepper and mix together into a smooth sauce.
  3. Season the fish filet with salt, pepper and lemon juice – Season the salmon or trout filet with freshly ground salt and pepper and squeeze a little lemon juice on top.
  4. Cover the fish filet with mayonnaise coating – Cover the seasoned salmon or trout filet with an even layer of the previously made mayonnaise sauce.
  5. Cook the fish filet in a preheated 200° oven or grill for 20 minutes – Preheat the oven or grill to 200 degrees. If you are cooking fish on the grill, I recommend using a foil grill tray. When cooking fish in the oven, you can use a regular baking sheet covered with baking paper or any ceramic baking dish without a lid.
Cook the salmon or trout filets in the oven or on the grill for 20 minutes. If it is a filet piece smaller than 500g, the fish can be cooked in 1-2 minutes. earlier and for a filet piece over 600 g, 1-2 min. longer. The most foolproof thing to do is to test the thickest part of the fish filet with a fork at around the 18th minute to see if the fish is cooked enough.
  6. Serve the fish filet with your favorite toppings – serve your favorite toppings next to the baked salmon filet. Some sides which go well with oven salmon are fresh salad, boiled or baked potatoes or boiled rice.

In the summertime, I recommend preparing the recipe on the grill, but the same juicy and good result can be obtained by cooking it in the oven.
