Finely chop the onion and mushrooms into tiny pieces. If you’re using fresh parsley, then finely chop that as well.
Add olive oil to the pan and heat the pan to a medium high heat.
Add the finely chopped onion and mushroom and cook until the water from the onion and mushroom evaporates and the mix slightly starts to caramelize. Just before they’re done, add a pinch of salt & pepper and lower the heat to medium.
Add the cream, parmesan cheese and finely cut parsley and stir the sauce. Let the sauce simmer(do not let the sauce boil) for a couple of minutes until it’s slightly thickened while stirring occasionally.
Taste the sauce for seasoning. Check if the sauce could use some more salt and if the thickness of the sauce is to your liking.
